food

Drew and I are back to being Vegetarians. It feel good to eat wholesome food.
Today I made stuffed spaghetti squash!
It was spicy and very yummy.
 
Ingredients:
one large spaghetti squash
garlic to taste (5 cloves for us)
one shallot (or half an onion)
3 mushrooms diced
1/2 zucchini
can of corn drained and washed
can of black beans drained and washed
cherry tomatoes
one red pepper
1/2 cup of salsa
1 tsp cumin
1 tsp paprika
hot chili to taste
cheese to top. we used peppered jack
 
 
recipe:
pre-heat oven to 400 degrees
clean and cut open squash, scoop out the goop and seeds
Put cut side down in deep dish with 1 cup of water
put into pre-heated oven and cook for 45 min or until squash is soft and
fork able
 
meanwhile:
in a frying pan add oil
crush 5 or more cloves of garlic (or to taste)
a half onion (we used shallot)
sauté until onion is clear
add mushrooms, zucchini, red peppers
fry for 3 min
add beans and corn, cumin, paprika and chili's
fry 3 min
add salsa
 
Scoop mixture into squash adding tomatoes
bake at 350 for 10 more min
add cheese to top
broil for 4 min
 
voila!
 
 Drew made pizza dough last night and we each made half with our favorite stuff. Drew used spinach and I used tomato.
Turned out sooo good!
